Healthy Cereal Treats

Maxi’s favorite treat? A Rice Krispie Treat. Can you blame a girl? The butter, sticky marshmallow, and crunch. It’s the perfect mix of salty and sweet. I had tried a few of the alternative healthy brands and she hated them and could tell a difference. I’m a big believer that kids can eat how much or how little they like on their plate, but you purchase what comes in your home. I wanted to find an alternative treat for her to enjoy as a dessert here or there, so I made these “healthy” cereal treats. I mean they aren’t hiding veggies in them or anything…but they are far better than the alternative!

The great part about cereal treats or “faux” Rice Krispies is how quick you can make them. 4 minutes on the stove and then you just chill in the fridge for an hour. Let’s get to making these for you!

Ingredients:

I have made these a few times and depending on how “much” you have of something, I eyeball the ingredients. I’ve made them with more marshmallows, less marshmallows, etc. So truly just try and eyeball this. 

  • 1/4 -1/2 Cup of Coconut Oil {really depends on how many marshmallows you use, I prefer 1/4 cup of oil with 3/4 of the bag}
  • 3/4 Bag of Dandies Marshmallows {again you can use the entire bag and more coconut oil, but it does make them a bit stickier}
  • 1 Teaspoon Vanilla Extract
  • 1 Box of Frosted Magic Spoon Cereal
  • Maldon Flaky Sea Salt

Instructions:

Melt the coconut oil on the stovetop and stir in the vanilla. I let it simmer for a minute or two together to mimick that browned butter flavor. Pour in 3/4 bag of Dandies Marshmallows and mix until melted together. You may need a spoon more of coconut oil just depending on marshmallow amount. Take the pan off the stove and then mix in a box of Frosted Magic Spoon Cereal. Mix well so every bite is covered in your oil mixture. Line a dish with parchment paper and spoon the mixture out on it. Press down with a spatula to make it all even and about an inch thick. While still warm, top with Maldon Flaky Sea Salt. Place in fridge to cool for an hour or two. Once cooled, remove parchment paper, slice the treats, and save in a container for the week.

Enjoy with your mid-day coffee!
